Our lean ground beef is ground round steak and is similar to a 90/10 lean ground beef.  
Just like our  traditional ground beef, the ultra lean ground beef is made in a single grind process where it is sourced individually from each beef, processed one at a time.  This is a significant contrast to typical ground beef where you may have beef from an unknown number of different sources and animals in a single package.
